I'm a hand-talker. After a glass or two of red, I get VERY expressive. I've found that ordering wine in a tumbler not only cuts down on the number of times I whack a glass off the table, it also makes for more generous pours. I won't tell you where I got this one because it was the bartender's first night and I'd like to keep him as my own little secret (honestly, if everyone went in asking for a filled-to-the-rim serving he might catch on and short-change me next time) but I will tell you that, so long as you don't get all high-maintenance and are sure to share the benefits of the special request with your server (no broken glass, no red wine stains on the upholstery) you'll likely reap similar rewards.
