Paragon Brewing

5785 N Government Way, Coeur d Alene, ID

Paragon owners Chris and Kerry Kieres plan a full-scale brewery next door (where they tore down a house to make way), but they've been more than successful so far operating as a restaurant/pub with 12 taps serving a variety of local and regional craft brews.In the meantime, they've also begun pouring the first batches of Paragon beers, which they're brewing at MickDuff's in Sandpoint, starting with Hiawatha Pale and Red Dog Brown. After a major facelift, their spot in the former Sully’s Pub & Grill is done up in tasteful colors with art on the walls and a wooden floor and bar. The eight tables in the small dining area are supplemented by a large back deck with umbrellas. The menu includes such British-style pub favorites as Scotch eggs, bangers and Welsh rarebit, augmented by creative specials, with beer incorporated into several recipes. Look for trivia on Tuesdays from 7 to 9. (8/15)
