Localizing food production is a popular trend nationally. With wheat so abundant to this area, Unifine Flour entrepreneur Steve Fulton explains why local flour milling makes sense, the value of this low-extraction process, and the potential benefits and profits to the region. Fulton hosts two public presentations. The first will be at noon as part of the Colfax Chamber of Commerce meeting and the second is at 7 p.m. during which a team of scientists join Fulton for an expanded version of the presentation.
